Finlandia Muenster Black Bean Burger

Ingredients
2 small red onions , 1 roughly chopped + 1 sliced into 1/4-inch thick rounds ( for topping )
8 ounces shiitake mushrooms, stemmed, roughly chopped
1 (15 ounce) can black beans, drained, rinsed, patted dry
1 1/2 cups plain breadcrumbs
1 teaspoon ground coriander
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 tablespoon olive oil
8 slices Finlandia® Muenster Cheese
2 ripe avocados, pitted, peeled
1 small shallot, minced
1 clove garlic, minced
4 sesame seed hamburger buns, slit and lightly toasted
1 beefsteak tomatoes, sliced into 1/4-inch thick rounds
Directions

1. Preheat oven to 400°F and line rimmed baking sheet with parchment paper.

 

2. Combine onion, mushrooms, and black beans, in food processor and pulse until finely chopped. Transfer mixture to large bowl. Fold in breadcrumbs, coriander, salt, and pepper until combined. Form into four 1-inch thick patties. Brush patties liberally with olive oil. Bake on prepared baking sheet until dark golden-brown, about 30 to 40 minutes. Top hot patties with 2 slices Finlandia® Muenster cheese.

 

3. For the guacamole, combine avocado, shallots, and garlic in small bowl. Season with salt and pepper.

 

4. Spread guacamole on both sides of buns. Top each bottom bun with burger patty. Layer with red onion, tomato and top with bun lid and serve.
